Espresso: Commonly misspelled and mispronounced as expresso, the correct
spelling and pronunciation is espresso. Espresso is defined as being a
concentrated form of coffee extracted by steam under 9 atmospheres of
pressure. It is specially roasted and ground for this form of extraction.
Once extracted, espresso should have at least 5mm of crema. Ounce for
ounce, it is five times the concentration of gravity brewed coffee.


Crema:
The golden “foam” that tops espresso. If the
shotdoes not have any crema, it is technically
not espresso,just burnt coffee.


Espresso Americano:
Oftentimes called “Americano.”
It is simply a wonderful espresso with water.


Latte:
A milk based drink. It is espresso and steamed
milk. A latte should have microfoam on top.


Cappuccino:
A milk based drink. It is espresso and
frothed milk. About a third of the drink should be froth.


Mocha:
A milk based drink. It is espresso, chocolate,and
steamed milk, topped with whipped cream.


Ivory Mocha:
the “white chocolate” version of the mocha.

Macchiato:
Means “marked” in Italian. A true macchiato (also called espresso macchiato) is simply
espresso topped with a dollop of frothed milk or cream. The espresso is “marked” with the froth.
A false macchiato (also called a latte/Seattle/Starbucks macchiato) is a milk based drink. The milk
is frothed and the espresso shots are poured in last, “marking” the froth with the espresso.
